Mustardy Fried Chicken Breasts - cooking recipe

Ingredients
    4 boneless chicken breasts
    dash of black pepper
    2 Tbsp. brown mustard
    1 individual pkg. Town House crackers, crushed
    1/2 tsp. salt
    1 egg
    1/4 c. Parmesan cheese
    oil (about 4 to 5 Tbsp.)
Preparation
    Wash chicken breasts and dry on paper towels.
    Sprinkle with salt and pepper.
    In a bowl, beat together egg and mustard.
    In separate bowl, combine cheese and cracker crumbs, mixing well. Dip each breast in egg mixture.
    Then roll in cheese mixture until evenly coated. Lay chicken on wax paper and allow coating to set for about 10 minutes.
    Saute chicken on both sides in heated oil for about 15 to 20 minutes or until tender.
    Add oil if needed.
