Zucchini Raisin Muffins - cooking recipe
Ingredients

1/2 c. raisins
1/3 c. water
2 1/2 c. flour
2 tsp. baking powder
1 tsp. soda
1/2 tsp. each: salt and cinnamon
2 eggs
1/2 c. oil
1 c. sugar
2 c. grated zucchini
1 c. walnuts
2 tsp. lemon zest
Preparation

Soften the raisins in the water for 10 minutes (lemon or orange flavored).
Sift together the flour, baking powder, soda, salt and cinnamon.
Whisk together the eggs, oil and sugar.
Stir in the remaining ingredients.
Stir until well combined.
Pour into 20 muffin tins.
Bake for 20 minutes or more at 400\u00b0.
