Calico Potato Salad - cooking recipe

Ingredients
    6 medium potatoes
    2 Tbsp. vinegar
    1 Tbsp. mustard
    1/4 tsp. pepper
    3/4 tsp. celery seed
    1 1/2 tsp. salt
    1/2 c. diced cucumber
    1/2 c. diced onion
    1/4 c. green pepper
    3 Tbsp. chopped pimento
    2 hard-cooked eggs
    1/2 c. Cool Whip
    1/2 c. mayonnaise
Preparation
    Cook potatoes, whole with skins on.
    (Should be 6 cups diced, cooked potatoes, about 6 medium potatoes.)
    Skin and dice while warm.
    Immediately add the vinegar, prepared mustard, pepper, celery seed and salt, then add the cucumber, onion, green pepper, pimento and eggs.
    Mix Cool Whip and mayonnaise together and add to potato mixture.
    Serves 10 to 12.
