Sweet Potato Bake - cooking recipe

Ingredients
    3 medium sweet potatoes or 1 (18 oz.) can
    1 (17 oz.) can apricot halves, drained
    3 Tbsp. brown sugar
    3 Tbsp. cornstarch
    1/2 tsp. grated orange peel
    1/4 tsp. salt
    1/8 tsp. cinnamon
    1/3 c. light raisins
    3 Tbsp. dry sherry
Preparation
    Cook potatoes in boiling water for 30 to 40 minutes.
    Cut lengthwise and place in a 10 x 6 x 2-inch baking dish.
    Drain apricots, reserving liquid.
    Add water, if necessary, to make 1 cup liquid.
    Arrange apricots over potatoes.
    In saucepan, combine brown sugar, cornstarch, salt, cinnamon and grated orange peel. Cook until thick.
    Sprinkle raisins over potatoes and apricots and pour liquid all over.
    Bake in 350\u00b0 oven for 20 to 30 minutes.
