Italian Sausage Casserole - cooking recipe
Ingredients

8 medium red potatoes, unpeeled and quartered
3 c. celery, cut up
2 medium onions, coarsely chopped
1 large green pepper, coarsely chopped
1 medium eggplant, peeled and cubed
1 large can pitted black olives, drained
1 1/2 lb. Italian sausage, cut in pieces
1 large can mushrooms, drained
1/4 c. olive oil
2 tsp. Italian seasoning
garlic powder to taste
Preparation

Brown sausage and cut into 1-inch pieces.
Set aside.
Place all vegetables and spices in a large bowl, mixing in olive oil gently.
Mix sausage and vegetables together and place in large glass baking dish.
Cover tightly
with foil and bake at 400\u00b0 for 1 1/2 hours.
Top with Parmesan cheese to serve.
Makes 6 large servings.
