Vegetable Cassoulet - cooking recipe
Ingredients

4 carrots, sliced
2 potatoes (or rutabagas), sliced
1 onion, sliced
3 cloves of garlic, minced
1/2 tsp. basil
1/2 tsp. marjoram
1/2 tsp. rosemary
1/2 tsp. thyme
1/2 tsp. white pepper
1/2 lb. firm tofu (optional)
2 c. cooked white beans
2 c. vegetable broth (or water)
chopped scallions for garnish
Preparation

Preheat oven to 350\u00b0. Coat large casserole with cooking spray. Add carrots, potatoes, onion and garlic; saute 5 minutes. Add herbs, tofu, salt if desired and beans. Add enough broth or water to cover, about 2 cups. Cover and bake 45 minutes; garnish with chopped scallions.
