Ingredients

2 c. milk
1/2 c. buttermilk baking mix
1/4 c. butter or oleo
1 1/3 c. coconut (Angel Flake)
3/4 c. sugar
4 eggs
1 tsp. vanilla
Preparation

Soften butter or oleo and place in blender with milk, sugar, baking mix, eggs and vanilla.
Blend on low speed for 3 minutes. Pour into a greased 9-inch pie plate.
Sprinkle with coconut. Bake at 350\u00b0 for 40 minutes or until pie is set and top is golden brown.
Cool on wire rack.
