Easy Carrot-Nut Loaf - cooking recipe
Ingredients

1 1/2 c. plain flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
3/4 c. vegetable oil
2 eggs
1 c. sugar
2 (4 oz.) jars strained baby food carrots
1 c. chopped pecans
Preparation

Combine first 4 ingredients in a small mixing bowl.
Set aside.
Combine oil, eggs and sugar in a large mixing bowl.
Beat at medium speed of an electric mixer for 1 minute.
Add dry ingredients; mix at low speed until just blended.
Fold in carrots and pecans.
