Potato Soup (Caldo De Papas) - cooking recipe

Ingredients
    6 medium potatoes
    1 c. beef broth
    1 medium onion, diced
    2 cloves garlic
    2 medium tomatoes, diced
    1 c. mild Cheddar cheese, cubed
    2 Tbsp. cooking oil
    salt and pepper to taste
    1/2 c. canned milk
Preparation
    Saute onion until limp; add garlic and tomatoes.
    Stir for a minute.
    Add potatoes and stir to pick up flavor from the first 3 ingredients.
    Pour in cup of beef broth and add water to fill your soup pot.
    Bring to a boil.
    Add salt and pepper to taste when boiling.
    Turn flame to simmer about 20 minutes when potatoes are soft.
    Add cheese and canned milk.
    Stir until cheese melts. Will feed 4.
    Time for complete meal is 30 minutes.
