Cajun Dirty Rice - cooking recipe

Ingredients
    1 lb. chicken gizzards and livers, chopped
    1 medium onion, chopped
    1 bunch green onions, chopped
    3 cloves garlic, chopped
    1 tsp. salt
    1 c. fresh chopped parsley
    4 c. cooked long grain rice
    1/4 c. oil
    1 c. diced celery
    1/2 c. diced bell pepper
    1 tsp. crushed red pepper
    1/2 lb. pan sausage (optional)
Preparation
    Brown gizzards and livers in oil until done.
    Add onion, green onions, garlic, salt, parsley, celery and bell peppers.
    Stir-fry for about 2 minutes on medium heat, stirring constantly.
    Do not overcook.
    Vegetables should be a little crispy; drain if necessary.
    Add red pepper.
    Pour this mixture into a large bowl. Add cooked rice; mix well.
    This will taste better the next day.
