Queen Of Pies - cooking recipe

Ingredients
    3 3/4 c. sugar
    1 c. flour
    few grains salt
    juice and rind of 3 lemons
    6 eggs, separated
    3 c. boiling water
    3 Tbsp. butter
    2 baked 9-inch pie shells
Preparation
    Stir together sugar, flour and salt in saucepan.
    Blend egg yolks and water; gradually stir into sugar mixture.
    Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
    Remove from heat and stir in butter, lemon rind and juice.
    Pour into baked pie shells.
