4 c. biscuit mix
1/2 c. sugar
2 c. canned apple slices, chopped
1/4 c. milk
2 tsp. vanilla extract
3 eggs
1/2 tsp. cinnamon
1/4 tsp. ginger
1/2 tsp. nutmeg
1/2 c. apple juice
1 1/2 tsp. lemon juice
4 c. confectioners sugar
1/2 c. coconut, toasted or tinted
Preparation

Combine biscuit mix and sugar; add chopped apples, milk, vanilla, eggs and spices.
Stir until well blended.
Knead dough on a heavily floured board until smooth.
Roll out dough about 1/2-inch thick.
Cut out doughnuts with a floured 3-inch doughnut cutter.
Drop doughnuts, a few at a time, into 400\u00b0 oil about 2 inches deep in pan.
Cook about 1 minute on each side or until evenly browned.
Drain on paper towels.
Bring apple juice and lemon to a boil.
Stir in confectioners sugar and beat until smooth.
Spoon about 2 tablespoons glaze over each doughnut while warm.
Roll half of glazed doughnuts in toasted or tinted coconut. Yield:
2 dozen.
