Ingredients

3 Tbsp. margarine
1/4 c. chopped onion
1/2 c. chopped celery
1 Tbsp. flour
1/4 c. cream
1 egg
1 Tbsp. diced carrots
3 c. green peas
1 egg yolk
Preparation

Scramble in 3 tablespoons margarine 1 egg and cook well.
Add onion, carrots and celery, stir over fire for a few minutes.
Add green peas, barely cover with water and cook until the vegetables are firmly tender.
Drain off the liquid and return it to the stove.
While it is coming to a boil, mix 1 tablespoon flour, 1 egg yolk and 1/4 cup cream.
Add the hot broth to the flour mixture, stir well and bring to a boil.
Add vegetable mixture.
