Chicken Creole - cooking recipe

Ingredients
    1 lb. chicken breast, cubed and sauteed
    1 medium onion, chopped
    1 medium green pepper, chopped
    1 small bunch celery, coarsely chopped
    1 (6 oz.) can tomato paste
    2 whole bay leaves
    1/8 tsp. cayenne pepper
    1 Tbsp. peanut oil
    1 tsp. butter or margarine
    2 c. water
    1 tsp. salt
Preparation
    In a large skillet, melt oil and margarine.
    Add vegetables and stir fry over medium-high heat until somewhat softened, about 5 minutes.
    Add tomato paste and blend with vegetables.
    Turn heat to high, adding water a half cup at a time and blending.
    Add remaining ingredients except chicken and bring to a boil.
    Lower heat to simmer and cover skillet.
    Simmer for 30 minutes.
    Add chicken.
    Simmer 10 more minutes.
    Remove bay leaves.
    Serve over hot rice.
