Apple Stuffed Acorn Squash - cooking recipe

Ingredients
    3 medium acorn squash
    1/2 c. butter, melted and divided
    salt to taste
    ground cinnamon to taste
    3 apples, peeled, cored and chopped
    1 Tbsp. grated lemon rind
    1 Tbsp. lemon juice
    1/2 c. honey
Preparation
    Wash squash. Cut in half lengthwise and remove seeds. Place squash, cut side down, in a 13 x 9 baking dish. Add 1/2-inch water and bake at 375\u00b0 for 35 minutes.
    Turn cut side up and fill squash with 2 tablespoons butter. Sprinkle lightly with salt and cinnamon.
