Chicken Soup - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 medium onion, diced
    3 garlic cloves, minced
    3 carrots, diced
    6 c. celery ribs, diced
    1 (8 oz.) can water chestnuts, sliced
    4 Tbsp. dried basil
    3/4 tsp. dried red pepper flakes
    5 c. mushrooms, sliced
    3 red bell peppers, diced
    12 small red potatoes, diced
    5 (14 1/2 oz.) cans chicken broth
    1 lb. diced, cooked chicken
    2 Tbsp. hoisin sauce
    salt and pepper to taste
Preparation
    Saute onion in a 6-quart pot over medium heat until golden brown.
    Add the next 4 ingredients and cook for 3 minutes.
    Then add the next 5 ingredients and cook 3 minutes.
    Add broth and cook 20 minutes, or until potatoes are done.
    Then add chicken and hoisin sauce, cooked 5 minutes.
    Salt and pepper to taste.
