Ingredients

2 eggs, separated
1/2 c. sugar
2 1/4 c. sifted cake flour
3 tsp. baking powder
1 tsp. salt
1 c. brown sugar, packed
1/3 c. oil
1 c. skim milk
1 tsp. maple flavoring
1/2 c. finely chopped pecans
Preparation

Beat egg whites until frothy.
Gradually beat in white sugar until stiff and glossy.
Stir flour, baking powder and salt into another mixing bowl.
Add brown sugar, oil and half
of milk. Beat 1 minute on medium speed.
Add remaining milk, egg yolks and flavoring.
Beat 1 minute more.
Fold in egg whites and pecans. Bake in greased and floured pans at 350\u00b0 for 35 to 40 minutes for two 8-inch layers or 30 to 35 minutes for oblong 13 x 9 1/2-inch pan.
