Colby Fiesta Salad - cooking recipe
Ingredients

4 (1 oz.) flour tortillas
1 lb. ground turkey, beef or veal
1 pkg. taco seasoning mix
3/4 c. water
2 c. shredded lettuce
jalapeno peppers, chopped (if desired)
1 large tomato, chopped
1 medium onion, sliced in rings
8 olives
1/2 c. evaporated skim milk
4 oz. Colby cheese, shredded
Preparation

Warm tortillas and place in a 4 or 5-inch container to bake for 8 to 10 minutes.
Cook meat, then add taco seasoning and water.
Heat.
Set aside.
Bring milk to a boil and add cheese, stirring until cheese melts.
Add jalapeno peppers, if desired. Keep warm.
Place tortilla bowls on plate.
Divide lettuce, tomato and onion equally.
Top with equal portions of meat, then cheese sauce.
Place 2 olives in each bowl.
Makes 4 servings.
