Shrimp Etouffee(Serves 4 To 6) - cooking recipe

Ingredients
    6 Tbsp. butter
    1 c. chopped onion
    3 Tbsp. flour
    1/2 c. chopped bell pepper
    6 green onions, chopped
    1/2 c. chopped celery
    2 c. water
    1/4 c. chopped fresh parsley
    3 lb. shrimp, peeled and deveined
    1 small bay leaf
    salt and pepper to taste
    Tabasco to taste
    4 c. cooked rice
Preparation
    In a skillet, melt butter and stir in flour.
    Cook, stirring constantly, until this is a rich brown color.
    Add vegetables and cook until tender.
    Stir in water, shrimp, parsley and seasonings. Simmer, uncovered, for 15 to 20 minutes or until shrimp are done. Do not overcook.
    Serve over hot rice.
