Pineapple Chicken - cooking recipe
Ingredients

2 Tbsp. olive oil
1 onion, chopped
3 lb. boneless, skinless chicken breasts, diced or stripped
1 (16 oz.) can pineapple chunks
2 Tbsp. red wine vinegar or cider
1 tsp. salt
1/8 tsp. pepper
2 medium tomatoes, chopped or canned
garlic to taste
Preparation

In a large skillet, heat oil until hot.
Add onion and garlic until onion wilts. Add chicken. Cook until brown.
Add rest of ingredients. Simmer about 6 minutes. Serve over rice or noodles.
