Gazpacho(Low-Fat Antioxidants) - cooking recipe
Ingredients

2 c. finely chopped tomatoes
1 1/2 c. finely chopped red bell pepper
1 medium cucumber, finely chopped (unpeeled)
1/2 c. red onion, chopped
3 cloves garlic, minced
11 1/2 oz. V-8 vegetable juice (1 1/2 c.)
2 Tbsp. red wine vinegar
Preparation

Combine all ingredients in a large bowl.
Cover.
Chill 1 to 2 hours before serving.
