Ingredients

1 garlic clove, chopped
1 small yellow onion, diced
2 Tbsp. olive oil
2 ripe tomatoes, diced
1/2 lb. thin sliced pepperoni
1/4 c. whipping cream
salt and pepper to taste
1/2 lb. rigatoni, cooked al dente
Parmesan cheese for topping
Preparation

Saute garlic and onion in olive oil, just until clear.
Add the tomatoes and pepperoni.
Saute until tomatoes cook down a bit (about 3 minutes).
Add the cream, salt and pepper.
Toss with the rigatoni and top with the cheese.
Serves 4.
