Brandied Shrimp Provencale - cooking recipe

Ingredients
    4 Tbsp. butter
    1 Tbsp. finely chopped onion
    1 clove garlic, chopped
    48 shelled raw shrimp
    2 oz. brandy
    1 c. peeled and cubed fresh tomatoes
    1 Tbsp. chopped parsley
    salt and pepper to taste
Preparation
    Brown butter in saute pan lightly; add onion, garlic, and shrimp and stir with fork rapidly for 2 minutes.
    Pour in brandy and light.
    Shake pan fast.
    Add tomatoes and parsley.
    Season to taste and serve.
    Yields 8 servings.
