Rice Con Queso - cooking recipe

Ingredients
    3 c. cooked rice
    1 can black beans, drained
    3 cloves minced garlic
    1 large chopped onion
    1 small chopped green chili
    1/2 to 3/4 lb. grated Monterey Jack cheese
    1/2 lb. Ricotta cheese
    1/2 c. grated sharp Cheddar cheese
    1 small can black olives, sliced
Preparation
    Mix together rice, beans, garlic, onion and chili.
    Set aside. Mix together Jack and Ricotta cheeses; thin with yogurt or milk until spreadable.
    Repeat layers of rice and bean mixture, then cheese mixture, ending with rice mixture, in a casserole.
    Top with grated Cheddar cheese and black olives.
    Bake at 350\u00b0 for 30 minutes, until browned and bubbly.
    Or can bake in microwave for approximately 15 minutes on \"High.\"
