Diabetic Fruit Cake - cooking recipe

Ingredients
    2 c. water
    2 c. raisins
    1 c. unsweetened applesauce
    2 eggs
    2 Tbsp. liquid sweetener
    1 1/3 sticks margarine
    1 tsp. soda
    2 c. self-rising flour
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1 tsp. vanilla
Preparation
    Simmer-cook raisins in water until water is gone.
    Remove from heat.
    Add applesauce, eggs, sweetener and margarine; mix well. Sift the dry ingredients together.
    Blend all together and add vanilla; pour into greased loaf or tube pan.
    Add nuts if desired. Bake for 1 hour at 350\u00b0.
