Chocolate Yule Log - cooking recipe

Ingredients
    4 1/2 pt. whipping cream
    1 pkg. chocolate wafers
    1/2 to 1 tsp. almond mint extract
    2 sq. semi-sweet baking chocolate
Preparation
    Whip chilled cream in deep bowl with chilled beaters.
    Beat only until soft peaks form.
    Do not overbeat.
    Fold in extract. Spread the whipped cream on one wafer at a time, sticking together to form a roll.
    Use the same serving dish you wish to use.
    Save wafers for the \"knot\".
