Mama Lola'S Chicken Gumbo - cooking recipe

Ingredients

1 stewing hen, cut up
1 large onion, chopped
1 garlic clove, minced
2 to 4 tsp. file
1 1/2 c. flour
3/4 to 1 c. cooking oil
salt and pepper

Preparation

Place chicken in 5-quart Dutch oven and cover with water.
Add onion and garlic.
Bring to boil, cover, reduce heat and cook slowly until chicken is tender.
