Sweet And Sour Carrots - cooking recipe

Ingredients
    1 lb. carrots, diagonally sliced
    1 green pepper, seeded and cut in 1-inch squares
    1 (20 oz.) can pineapple chunks (in own juice)
    1/3 c. sugar
    1 Tbsp. cornstarch
    1/2 tsp. salt
    2 Tbsp. vinegar
    2 tsp. soy sauce
    1/3 c. pineapple juice
Preparation
    Cook carrots covered in small amount of water (slightly salted) for 15 minutes.
    Add green pepper and cook 3 minutes more.
    Drain. Drain pineapple, reserving juice.
    Combine sugar, cornstarch, salt, pineapple juice, vinegar and soy sauce in a separate pan.
    Cook and stir until bubbly.
    Stir in vegetables and pineapple; heat thoroughly.
    Makes 6 servings.
