Tabbouleh Salad - cooking recipe
Ingredients

1 c. cracked wheat
1 bunch parsley
8 spring onions (scallions)
1 bunch mint
4 tomatoes
salt and freshly ground black pepper
4 Tbsp. lemon juice
extra virgin olive oil
Preparation

Soak the cracked wheat for 20 minutes in cold water.
Drain and press out all excess water.
Finely chop the parsley, discarding the stalks.
Finely chop the scallions, including the green part.
Finely chop the mint.
Place the cracked wheat in a large bowl with the mint, parsley and scallions.
Add the coarsely chopped tomatoes and season with salt and pepper, the lemon juice and olive oil.
Chill in the refrigerator before serving.
