Shrimp Thermidor - cooking recipe

Ingredients
    2 lb. cleaned shrimp, cooked
    1/3 c. butter
    1/3 c. flour
    1/2 tsp. each salt and paprika
    1 1/2 to 2 c. half and half (light cream)
    3 Tbsp. sherry
    1/2 c. grated Cheddar cheese
Preparation
    Cut shrimp if
    large and toss with 1 tablespoon sherry; set aside.
    Melt
    butter,
    remove from heat and stir in flour, salt and paprika until smooth.
    Gradually stir in light cream. Bring to a boil, stirring constantly, reduce heat and simmer 2 to 3 minutes.
    Add
    shrimp
    and\tthe
    rest of the sherry.
    Put into baking dish and sprinkle with cheese.
    Bake at 350\u00b0 until heated through.
    Serve over rice.
