Helen'S Day Before Curried Rice - cooking recipe

Ingredients
    1 c. chopped onion
    2 Tbsp. butter or margarine
    1 c. light raisins
    1 Tbsp. curry powder
    1/2 tsp. salt
    8 c. cooked long grain rice (2 1/2 c. uncooked)
    1 (3 1/2 oz.) can flaked coconut
    2 c. chicken broth
Preparation
    Saute onion in butter until tender, but not brown.
    Add next 5 ingredients; toss to mix.
    Place in a 17 1/4 x 11 1/2 x 2 1/4-inch baking pan.
    Drizzle chicken broth over evenly, mixing lightly with fork.
    Refrigerate overnight.
    Bake at 400\u00b0 for 1 hour and 15 minutes.
