Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 1/2 c. water
    1 small onion, diced
    2 blades celery
    1/3 green bell pepper (optional)
    3 Tbsp. oleo
    1 tsp. salt
    1/2 tsp. pepper
    1 1/2 c. cornbread crumbs
    1 egg
    1/2 c. grated cheese
Preparation
    Peel eggplant; cut up in cubes and place in saucepan with water.
    Cook until soft; drain and mash with fork.
    Set aside.
