Broccoli Corn Bread - cooking recipe
Ingredients

1/2 c. diet Parkay, melted
1/3 c. chopped onion
1 tsp. salt
3/4 c. cottage cheese
10 oz. pkg. frozen broccoli, chopped
4 eggs, slightly beaten
8 1/2 oz. pkg. Jiffy corn muffin mix
Preparation

Thaw and drain broccoli.
Combine first 6 ingredients.
Stir (don't beat) muffin mix.
Pour in 13 x 9 x 2-inch pan.
Bake for 20 to 25 minutes at 400\u00b0.
