Zucchini Casserole - cooking recipe

Ingredients
    6 c. unpeeled zucchini, sliced 1/2 inch thick
    7 Tbsp. butter
    1 c. shredded carrots
    3/4 c. chopped onions
    3 c. herb seasoned stuffing bread cubes
    1 c. cream of chicken soup (undiluted)
    1/2 c. sour cream (optional)
Preparation
    Cook zucchini slices in boiling, salted water until tender. Drain.
    In saucepan, melt butter (5 tablespoons).
    Add carrots and onions; saute.
    Remove from heat and add 2 cups bread crumbs and remaining ingredients.
    Fold in zucchini.
    Spoon into 3-quart casserole.
    Melt remaining butter and add to dish.
    Sprinkle with remaining bread crumbs over top.
    Bake at 350\u00b0 for 30 to 40 minutes.
