8 small, skinless, boneless flounder fillets (about 1 lb.)
salt and pepper to taste
1 Tbsp. vegetable oil
2 Tbsp. mayonnaise
1 Tbsp. Dijon mustard
2 tsp. finely chopped parsley
4 lemon wedges
Preparation

Preheat the broiler to high.
Place the fillets on a flat surface.
Sprinkle with salt and pepper and brush with oil. Arrange the fillets on a baking sheet or dish.
Blend the mayonnaise, mustard and parsley.
Brush it evenly over the fillets.
