Diabetic Applesauce Cake - cooking recipe
Ingredients

2 c. water
2 c. raisins
1 c. unsweetened applesauce
2 Tbsp. Sweet 'N Low
1 tsp. baking soda
1 1/2 tsp. cinnamon (optional)
1 tsp. vanilla
2 eggs
3/4 c. cooking oil
2 c. flour
Preparation

Cook raisins in water until all liquid evaporates.
Add applesauce, eggs, Sweet 'N Low and oil and mix well.
Blend in baking soda and flour.
Add vanilla and cinnamon.
Mix well and pour into greased cake pan or muffin pan.
Bake in 325\u00b0 oven for 35 minutes (muffins 25 minutes).
