Preparation

Preheat oven to 300\u00b0.
Place roast, fat side up, in an uncovered pan.
Sprinkle with salt and pepper.
Roast in slow oven at 300\u00b0.
Do not baste or turn.
There will be less shrinkage than in a hot oven and the meat will be brown and juicy, never dry.
