Christmas Eve Salad(Ensalada De Nochebuena) - cooking recipe

Ingredients
    1 medium size head iceberg lettuce, shredded
    8 small cooked beets, peeled and thinly sliced
    4 oranges, peeled and thinly sliced
    4 unpeeled red apples, cored and thinly sliced
    4 bananas, thinly sliced
    1 pineapple, peeled, cored and thinly sliced, or 1 (1 lb. 14 oz.) can pineapple chunks, drained
    3 limes, peeled and thinly sliced
    1/4 c. sugar (optional)
    seeds of 2 pomegranates (I omit this)
    1 c. salted peanuts, chopped
    1/2 c. salad oil
    1/4 c. red wine vinegar
    salt
Preparation
    Put lettuce in a large shallow bowl and arrange beets, oranges, apples, bananas, pineapple and limes over it.
    Sprinkle with sugar, if desired.
    Sprinkle pomegranate seeds and chopped peanuts over all.
    Mix oil with vinegar and salt to taste.
    Just before serving, pour over salad and mix gently.
    Serves 8.
