Applesauce Muffins - cooking recipe

1 3/4 c. applesauce
1 egg, beaten
2 c. flour
1 tsp. baking soda
1/4 c. sugar
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
3 Tbsp. margarine, melted
1/2 c. raisins
Preparation

Combine applesauce and egg; stir well.
Combine flour, soda, sugar, salt and spices.
Add to applesauce mixture, stirring just enough to moisten the dry ingredients (overmixing makes tough muffins).
Stir in the melted margarine.
Toss raisins with an added 1 tablespoon of flour and fold into batter.
Spoon batter into greased muffin tins, filling 2/3 full.
Bake 20 to 25 minutes at 400\u00b0 until golden brown.
Makes 18 medium size muffins.
