Caramel Topping(Diabetic Recipe) - cooking recipe

Ingredients
    2 c. sugar
    3/4 c. water
    1 (12 oz.) can evaporated skim milk
    1/2 tsp. vanilla extract
    1/2 tsp. almond extract
Preparation
    In large, heavy saucepan, bring sugar and water to a boil. Swirl mixture (do not stir) until clear.
    Cover pan tightly; boil over moderately high heat for about 10 minutes, swirling constantly.
    Remove cover; continue boiling while swirling until syrup turns light brown.
    Remove from heat; allow syrup to cool as you heat evaporated milk.
    Add heated milk to syrup, stirring constantly.
    Simmer until syrup dissolves in milk.
    Add extracts. Continue simmering to thicken slightly.
    Serve warm or cold.
