Opossum Pie - cooking recipe
Ingredients

30 Ritz crackers
1 c. pecans
1 c. sugar
3 egg whites
1 tsp. vanilla
1 container Cool Whip
Angel Flake coconut
Preparation

Break or chip Ritz crackers (not too fine).
Do pecans the same.
Beat egg whites until stiff.
Add sugar, pecans and vanilla.
Bake in greased pie pan at 250\u00b0 for 25 minutes.
Let cool.
Cover with Cool Whip and coconut.
Keep in refrigerator.
