Squash Souffle - cooking recipe
Ingredients

4 c. yellow squash
1/2 c. mayonnaise (lite)
1/2 tsp. salt
1/2 onion, sliced
4 eggs, beaten
1 doz. saltine crackers
1 c. grated Cheddar cheese
pepper (optional)
Preparation

Slice, cook and drain squash.
Add mayonnaise to beaten eggs. Add squash, onion and crackers (rolled fine).
Add salt, then blend well.
Pour into buttered dish.
Top with grated cheese. Bake in a 300\u00b0 oven for 45 minutes.
