Quick Tortellini Soup(Excellent) - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 oz. pancetta, finely diced or Canadian bacon
    3 cloves garlic, minced
    1 finely diced onion
    9 c. chicken broth (homemade or canned)
    2 tsp. Italian herb blend
    1 (28 oz.) can crushed tomatoes
    pkg. spinach or cheese tortellini (freezer or dairy)
    8 oz. fresh spinach, rinsed, stemmed and finely chopped (I use less)
    1 c. fresh grated Parmesan cheese
    salt and pepper
Preparation
    Heat oil in stock pot over medium heat; add pancetta (or Canadian bacon), garlic and onion and cook until lightly softened, 12 to 15 minutes.
    Add chicken broth and herbs.
    Bring to a boil and stir in tortellini.
    Simmer, uncovered, until tortellini is cooked, 10 to 12 minutes.
    Stir in tomatoes and simmer another 5 to 6 minutes.
    Add spinach and cook another 5 minutes.
    Ladle into bowls; sprinkle on the Parmesan cheese.
    Serve with chunks of Italian bread.
