Vidalia Onion-Cranberry Relish - cooking recipe
Ingredients

1 large Vidalia or other mild sweet onion, cut into thin wedges
1 Tbsp. butter
1/4 c. dry red wine
dash salt
3/4 c. packed brown sugar
4 inches stick cinnamon
1 12-oz. pkg. fresh cranberries (3 c.)
Preparation

Cook onion in butter in a medium skillet for 10 minutes or till tender, stirring frequently.
Add wine and salt.
Cook and stir 1 minute more.
Remove from heat and set aside.
Combine brown sugar, cinnamon, and 1 cup water in a medium saucepan; simmer, uncovered, for 15 minutes.
Add 2 cups cranberries and cook, uncovered, for 10 minutes, stirring occasionally.
Add remaining cranberries; cook 10 minutes more or till berries pop, stirring frequently.
Remove cinnamon sticks.
Stir in onion mixture. Transfer to a medium bowl.
Cover and chill until serving time or up to 3 days.
Makes about 3 cups.
