Italian Sausage - cooking recipe

Ingredients
    5 lb. lean Boston pork butts or 1 1/2 lb. lean beef and 3 1/2 lb. Boston pork butts
    1 Tbsp. salt
    1 1/2 Tbsp. black pepper
    1 Tbsp. red pepper
    hog casing (small ones)
    7 Tbsp. fennel seed
Preparation
    Cut
    pork
    into
    cubes.
    Mix salt, black pepper and red pepper together.
    In
    large pan mix thoroughly the seasonings and
    meat together.
    Add
    fennel seed to meat mixture and mix well.
    Cover and refrigerate.
    Clean pork casing by rinsing in warm
    water, then
    let
    water run through the casing to clean inside.
    Grind meat with chilli plate first, then with sausage plate
    to
    stuff sausage in casing.
    Cook sausage in 350\u00b0 oven for 1 hour or until done.
