Spaghetti With Fresh Tomato Sauce - cooking recipe

Ingredients
    4 large ripe tomatoes
    2 garlic cloves, finely chopped
    4 Tbsp. chopped fresh herbs, such as parsley, basil, oregano or marjoram
    2/3 c. olive oil
    salt and pepper
    1 lb. spaghetti
Preparation
    Skin the tomatoes by placing them in boiling water for 1 minute only.
    Lift tomatoes with a perforated spoon and plunge into a bowl of cold water.
    Peel off the skin then drain tomatoes on paper towels.
    Chop tomatoes into cubes and mix with herbs, olive oil and seasoning.
    Put into a glass bowl and cover and allow to sit for at least 30 minutes.
    Cook the spaghetti as directed, then drain. Toss spaghetti with tomatoes and serve immediately.
