Red Snapper Victoria - cooking recipe
Ingredients

1 1/2 lb. red snapper
1 (15 oz.) can tomato sauce
1 (16 oz.) can stewed tomatoes
1 medium onion, sliced
1 bell pepper, chopped
2 carrots, sliced
2 stalks celery
1 tsp. oregano
1 tsp. garlic salt
1/2 tsp. basil
1 clove garlic
salt and pepper to taste
2 Tbsp. oil (olive or vegetable)
Preparation

Saute garlic lightly in oil; add vegetables and saute until onion is tender.
Add tomato sauce and stewed tomatoes; sprinkle all with seasonings.
Cover and simmer for 10 minutes to blend flavors.
Add snapper fillets, cut into serving size portions. Bring to boil; lower heat and simmer for 15 minutes or until fish is firm and flaky.
Can keep warm for 1 to 2 hours.
Serves 4 generously.
Good with cheese bread and salad.
Can also add scallops, shrimp or squid.
