Potato Cheese Soup - cooking recipe

Ingredients
    3 medium potatoes
    1 small onion, finely chopped
    1 c. boiling, lightly salted water
    milk
    3 Tbsp. oleo
    3 Tbsp. flour
    3 Tbsp. parsley
    pepper to taste
    1 c. shredded Swiss cheese
Preparation
    Wash, pare and cut potatoes into small pieces.
    In 2-quart saucepan, bring water to a boil and add potatoes and onion. Cover and cook over low heat until tender.
    Mash slightly.
    Do not drain.
    Measure the potato mixture and add enough milk to make 5 cups.
    Combine melted oleo, flour and parsley and stir into potato mixture.
    Cook and stir until thickens.
    Season with salt and pepper.
    Remove from heat and add cheese.
