Yellow Squash Casserole - cooking recipe

Ingredients
    6 to 8 yellow squash, sliced crosswise
    1 large white onion, sliced thinly
    salt and pepper to taste
    1 (10 3/4 oz.) can mushroom soup, undiluted and beaten with 2 eggs
    1 1/2 c. Pepperidge Farm herb stuffing mix
    2 c. grated sharp or medium Cheddar cheese
Preparation
    Cook squash and onion in water until tender.
    Drain.
    In a greased casserole, layer vegetables with a mixture of soup, cheese and seasonings.
    Top with stuffing mix and bake 15 to 20 minutes at 400\u00b0.
    Serves 8.
