Lobster Dien Bien - cooking recipe

Ingredients
    2 lb. fresh lobster or shrimp
    6 oz. butter
    2/3 c. chopped scallions
    1 green pepper, diced
    1 1/4 c. fresh mushrooms
    1/2 c. Uncle Ben's converted rice
    3 ripe tomatoes, chopped fine
    2/3 c. chicken consomme
    1 tsp. powdered tarragon
    1 tsp. pepper
Preparation
    Cut lobster in small pieces.
    Season with 1/2 teaspoon pepper and 1/3 teaspoon salt.
    Brown in 4 ounces of butter in pan. Partly brown lobster in butter.
    Chop scallions, green pepper and mushrooms and add to lobster.
    Simmer 5 minutes.
    Add rice, stirring continuously until rice is loose.
    Add tomatoes and consomme.
    Stir and cover.
    Cook about 25 minutes.
    Remove from heat.
    Brown remaining 2 ounces butter; add tarragon and pepper. Pour over lobster and mix well.
    Serves 3.
